Pineapple Pork with Ginger Soy SauceElephant and Chick
1 pound pork tenderloin (trimmed and cut into bite size pieces)
1/4 teaspoon black pepper
1/2 cup soy sauce
2 Tablespoons honey
2 inches fresh ginger, peeled and grated to yield 1 Tablespoon of ginger
4 cloves garlic, minced
4 cups broccoli
1 Tablespoon oil
1 red bell pepper, cut into thin strips
2 cups diced pineapple
Brown rice (2 cups, cooked)
Prepare and set aside the following:
- Season pork with pepper
- Combine soy sauce, honey, ginger, and garlic in a small bowl
- Microwave broccoli on high for about 2 minutes just to begin the cooking
Heat a large, nonstick saute pan over medium heat and add oil. Once the oil is hot add the pork and saute until golden, stirring often for about 2 minutes. Add the soy sauce mixture to the pan. Add bell pepper, pineapple, and broccoli. Stir to combine and reduce heat to low. Cook for 3-4 minutes. Be sure to not over cook and wilt the broccoli.
