Chocolate Cake Mix Cookies

Happy National Chocolate Cake Day! Lucky for us, they've given this delicious dessert it's own special day. (Google it - it's definitely a real holiday).


I, for one, can't believe that January is almost over. This month literally flew by! I've always loved January (probably because it's my birthday month), and because I LOVED playing in the snow when I was little. But now that I live in San Francisco and there's no such thing as snow, I've been counting down the days till I could decorate my apartment in red and pink for Valentine's Day. 


Let's be honest though, the best part of Valentine's Day is definitely the candy. A big thanks to my momma for sending me all my favorites: sweethearts, sixlets, peeps, and Jelly Belly petite sour heart candies (from Jolley's).


I have a special chocolate cake recipe to share with you all today, in honor of this special holiday. As much as I love chocolate cake, it's a difficult treat to package up and take to friends, and there's no way I want my husband and I to eat it all by ourselves. So that brings us to Chocolate Cake Mix Cookies.


I've been making cookies using cake mix since 5th grade (when Mrs. Petersen made them for our class and shared the recipe), and I love them. They are so soft inside, and incredibly easy to make!



I really wanted to dress them up for Valentine's Day though, so I dipped them in chocolate, and topped them with red, pink, and white heart-shaped sprinkles.



And now for the recipe. Here's what you need:

1 box chocolate cake mix
2 eggs
1/3 cup vegetable oil
1 tsp baking powder
1 tbsp vanilla extract
Melted chocolate (I used milk chocolate chips)
Pink and red heart sprinkles


1. Add the cake mix, eggs, oil, vanilla, and baking power in a deep bowl. Mix until you have a dough-like batter. (The dough will be pretty sticky. Don't worry - that's good).

2. Chill dough in the fridge for about 20 minutes.

3. Shape dough into small round balls and place on a cookie sheet lined with parchment paper.

4. Bake at 350 degrees for 10-12 minutes.

5. After the cookies have cooled to room temperature, melt chocolate pieces in a small bowl (at 15 second increments).

6. Dip half of the cookie in the chocolate, and toss on a few sprinkles. Let the cookies harden (about 20 minutes) before storing in an air tight container.
