Recipe Roundup- Week 4

These five recipes are classics around this house.  Seriously, I think I almost have all five recipes memorized.  If you've been to our house recently, chances are you've been served one of these meals.

Pre Penelope (aka Baby life) when I would have company over it was an entire day's worth of work.  I would clean in the morning, slooowly work on parts of the meal through the day, set the table, unload the dishwasher... etc

I.do.not.have.time.for.that.anymore.

Therefore, a while after Penelope was born, I was convinced that I couldn't invite people over because I no longer had time.

But then I realized,  #YOLO simplify.

Enter these five recipes.

Now, when you come to my house, you're lucky if the table is set, and the dishwasher is unloaded.  Chances are there is still this mornings shaker bottle's in the sink from our green smoothies, the dishwasher's still clean and waiting to be unloaded and Penelope's outfit is covered in spit-up.

Buuuut, at least the food will taste delicious and we're being social.  Its a win win.
  



I made this when we had some new friends over to our house a couple weekends ago (we just moved).  I wasn't home all day so I needed it to be something fast, but impressive.  Our budding friendship was on the line! It was so good, and so easy.  



Vegetarian lovers unite! 
A couple times a month i'll make a vegetarian meal for our family.  It is cheaper then doing meat every night, a change of pace and delicious.  
This is definitely a go-to for us.  It takes 30 minutes from start to finish to make and cooks all in one pot. (Less dishes, yay!)   It is also a protein power house so you will definitely get full. 



BBQ Chicken in Crockpot, Baked Potoes & Baked Broccoli

Okay, so i don't really have a full recipe for this meal because it is so simple.  Take your desired amount of chicken and dump it in the crockpot with a bottle of BBQ sauce and let it cook on low for 6-8 hours.  The chicken will be flavorful and pull apart.  
 Cook your sweet potatoes right on the rack of the oven at 450 degrees for 45 minutes or until tender.  See above link for our favorite way to have broccoli.  (We just put sea salt, pepper & olive oil on ours).




This meal will always be special.  It is the very first meal our soon-to-be best friends made for us when we moved to Pittsburgh 2+ years ago.  It is because of this meal our friendship got off on a good foot.  Make this meal for a potential new friend and yours will too (wink, wink).
