Caramel Apple Fondue

Have you ever been to Rocky Mountain Chocolate Factory? I always get the Apple Pie Caramel Apple and about die every time I eat it. They do a great job of turning something so healthy into a deliciously unhealthy treat. After all, an apple a day does keep the doctor away, right?
(Confession: we ate this apple in less than 6 minutes.)
I've had enough of those apples in my day that I finally decided to recreate it myself.
My husband and I spent Halloween with his brother and sister-in-law and three adorable kids. After an evening of trick-or-treating, we came back to the house for more sugar: caramel apples. But I loved what my sister-in-law did with them. Instead of coating the entire apple with caramel, she cut them up and had us dip individual apple slices into the caramel like fondue. Genius.
I recreated the experience with some friends and was so happy with how it turned out. I found a caramel recipe online and changed it up a bit and was very pleased with out it turned out.
Caramel Apple Fondue
Total time: 30 mins
Caramel:
1 cup heavy cream, divided
3/4 cup light corn syrup
1/2 cup (1 stick) unsalted butter
1 cup sugar
1 teaspoon vanilla extract
Toppings:
Oreos
M&Ms
Peanuts
Coconut
Candy corn
White chocolate
Cinnamon sugar
(basically anything nice and sugary)
Directions:
In a medium saucepan, cook 3/4 cup of the cream, the corn syrup, butter, and sugar to 235 degrees F (soft ball) (**if you don't have a candy thermometer, see below). This will take about 20 minutes, but watch it carefully. At this point, the syrup will be golden.
While the caramel is cooking, wash and completely dry apples. Cut into slices.
After the caramel reaches the soft ball stage, remove from heat and carefully swirl in the remaining 1/4 cup of cream and vanilla.
Dip apple slices into caramel and top with whatever your heart desires!
**Use the cold water test. Try to get the caramel as close to the soft-ball stage. It's easier to dip the apples into if it's not already hardening.
I like doing the caramel this way because it's soft like fondue and sticks to the apples better. Try it. You won't be disappointed!
