Full of Pumpkin Bread
So others may be sick of pumpkin...but this is the only time I ever actually "feel" like eating things with pumpkin in them. I've had my fair share of pumpkin bagels and cream cheese, cookies, and even waffles this season. So naturally, when my mom found a recipe for a type of pumpkin bread, I was ready and so willing to play around with the recipe. I've made different pumpkin bread recipes before, but never have I had something so moist and so full of flavor then this one.Check it. Let's call it....
Full of Pumpkin Bread
--preheat oven to 350 degrees
Cream together:
4 eggs
⅓ cup softened butter
⅓ + ¼ cup unsweetened applesauce
1⅓ cups sugar
Then add:
15 ounces of pumpkin (in a can)
2 (maybe even 3) very ripe bananas
Finally, add:
3½ cups flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
3¼ teaspoons cinnamon
¼ teaspoon ground cloves
¼ teaspoon nutmeg
¼ teaspoon ginger
After I mixed it up, I added a few mini chocolate chips.
We love making bread into smaller loaves. Not only does it not take as long to bake, but then we can give away a few to our neighbors.
So for a smaller size loaf, bake for 30-40 minutes. Larger (regular) loaf, bake 50-55 minutes.
So yes, I guess the title is a little misleading of "Full of Pumpkin Bread" because it has bananas and applesauce in it as well, but that's what helps keep the bread moist and delicious. I'm calling it this because people were a little put off when hearing it had applesauce and bananas (kind of like when you find out the secret ingredient is mayonnaise in a certain dish). This is a new favorite around here and I hope you enjoy it as well!!
OHHHHHHH my. So I'm in love with peanut butter. The other day I toasted a piece of this bread and then put peanut butter on it (I love warm bread with peanut butter). If you are a peanut butter lover, this is a must try. Soooo tasty!
