Rainbow Birthday Cake {Tutorial}

The thing I love the most about this cake is how easy it is to make!  It looks impressive... but is so so so easy to make.  If I can do it, so can you!
I want to share my tips with you in hopes that they will be as useful to you as they were to me:

1. Make your batter and pour into two circle pans.  I made one batch of my favorite chocolate cake and it was enough for both cake pans.

2.  Cook and level out cakes.  Take your cake out of the cake pan and cool.  Then take a knife to the cake and level out like shown in the picture.  (This makes it so your rainbow arch is not lumpy. )

3.  Cut your cake in half and use frosting between the two halves to act as glue.  Place the cake on a cake stand and frost.  I used 3 cake halves (of the 4 available).

I got to this step on Thursday and the party wasn't till Saturday so I  covered it with tinfoil in the fridge until Saturday morning when I finished the cake. The cake was still moist and fresh when we cut into it Saturday afternoon.

4.  Frost your cake.  I made a cream cheese frosting and layered it on thick.  This was easy to do because the cake was cold from being in the fridge.

5.  Place Skittles on cake in rainbow order.  I used 3/4 of one bag of skittles and after every color I would stick the cake back into the fridge for 20 minutes so the frosting didn't melt.

I had to place the skittles in rainbow order so I remembered which color came after each other. haha

Tada!
