{Breakfast}: Avocado & Eggs on Toast

One of my New Year's resolutions this year was to eat healthier. I thought I'd start by changing my breakfast habits. After all, it is the most important meal of the day. My husband and I started making acai bowls, and enjoyed the fruity start to our day. We wanted to find another go-to recipe though to add to the mix - something a little more savory to shake things up.



Sometimes, simple is better. There really isn't anything special about avocado and eggs on toast, but that's what makes it so great! This savory combination is packed with protein and is sure to keep you full until lunch. Two slices of toasted whole-grain bread, topped with smeared avocado is only the beginning. Top with two eggs (sunny-side up, over-easy, scrambled - however you prefer) for an extra dose of protein and sprinkle salt and pepper on top. Stick them in a tupperware as you run out the door, and it makes for a quick, delicious breakfast on the go!

To add a little variety from day to day, I like to sprinkle a few red pepper flakes on top, and my husband likes to drizzle a little Cholula hot sauce for an extra punch in the face.



Ingredients:
2 slices whole-grain bread
1/2 avocado
2 eggs (cooked how you prefer)
Salt and pepper

Additional toppings:
Lime juice (drizzled on top of avocado before you add the eggs)
Tomatoes
Shredded cheddar cheese
Red pepper flakes

How I went so many years without eating avocado on toast is beyond me. What's your favorite breakfast in the morning?
