4th of July - Mini Cookie Cups
Every time I post, I seem to always share one more thing I love about living in San Francisco (have I convinced any of you to move out here yet??). Yesterday, I had dinner with some of my cousins - they were out here visiting for a few days, and let me tag along for dinner. As much as I wish people visited SF to see me, more often than not they're here to bike across the Golden Gate Bridge, drive down Lombard Street, and eat a dessert at Ghirardelli Square. BUT! They still took the time out of their busy touristy schedule to eat pizza with me.
Either way, being far away from family is hard. So I love any chance I get to catch up with an old friend or go to dinner with a cousin.
Enough about that - on to the food.
I love cookies. I could eat a cookie of any shape, size, flavor, texture. I also love mini desserts - mini donuts, mini cupcakes, mini fruit tarts, and of course anything with mini chocolate chips in it - you name it! So for today's recipe, I thought I'd add the two together and make Mini Cookie Cups.
These are SO easy to make, taste AMAZING, and look like you spent all afternoon making them (remember - any dessert can look impressive if it's presented in the right way). Simply start out by making your favorite chocolate chip cookie dough recipe. After you've make the dough, form a normal cookie ball size in your hand, and then flatten it into the bottom of a cupcake pan.
Bake according to the recipe directions. I would cook them on the shorter end of the time frame though (most recipes say "bake for 8-10 minutes." Bake your cookie cups for 8 minutes). After they've cooled, take them out of the pan and store in an air-tight container until you're ready to serve.
When you're ready to serve your dessert, plate the cookie cup, top with a scoop of ice cream, and drizzle a little chocolate sauce on top (I used Hershey's Syrup). Top with red and blue sprinkles and you're ready for the BBQ!
I loved the way these turned out. I also love that it's an easy dessert I can make beforehand. It doesn't take a lot of assembly, but your guests will still be impressed!
Mini Cookie Cups
Ingredients:
Your favorite chocolate chip cookie dough
Ice Cream
Chocolate Syrup
Sprinkles
Directions:
1. After you've made a batch of your favorite cookie dough, form a normal cookie ball size in your hand, and then flatten it into the bottom of a cupcake pan.
2. Bake according to the recipe directions. After they've cooled, take them out of the pan and let cool completely (you don't want the ice cream on top to immediately melt).
3. When you're ready to serve your dessert, plate the cookie cup, top with ice cream, and drizzle a little chocolate sauce on top (I used Hershey's Syrup). Top with sprinkles!
