A Little Piece of Heaven - Rolo Cookies

Have you ever had one of those moments where you just want to fall over and do absolutely nothing?? Yeah, that was me Thursday night..but I couldn't.  Guys, ha it had been a long week--like I fell asleep while I was on hold with someone and they had to say my name 3 times to wake me up.  Anyways, I had some things I needed to get done for work and I had a date that night as well.  I was in no mood for being cute and I needed a major pick me up.  Five minutes before he was supposed to pick me up, he called saying he'd be over in ten.  Not that big of a difference, but that meant I had TEN WHOLE MINUTES more to myself...and you'll never guess what the first thing that popped into me head was: "Yeah, ten minutes is plenty of time to make some cookie dough."

It's amazing how just the simplest thing like making cookie dough made me so much happier.  And yes, my date walked into the kitchen to me sitting at the counter with spoon in hand and a bowl of chocolate cookie dough in front of me.  I had no care in the world at the moment, and it turned out to be a great night.

But, then I was stuck with this bowl of chocolate cookie dough the next day.  (I mean, I totally could eat a whole bowl of cookie dough, but I do like to think I have some control over my cookie dough indulges;))  I was thinking and thinking, and I was finally remembered one of my sisters and mine favorite past times:

Rolo Cookies.

Yeah, they taste as good as they sound.  Imagine biting into this beautiful chocolate cookie covered in white sugar.  As you're biting down, this creamy caramel stuff hits your tongues and it's like instant melt.  Like melt-to-the-ground-because-you-think-you-just-died-and-tasted-a-little-bit-of-heaven amazingness.

I could go on, but I'll just give you the recipe instead:

1 cup butter
1 cup sugar
1 cup brown sugar
2 eggs
2 tsp vanilla
2 ½ cups flour
¾ cup unsweetened cocoa
1 tsp baking soda

Cream butter and sugars.  Beat in eggs and vanilla.  Add dry ingredients and mix well!  Grab a piece of the dough and cover rolo with chocolate dough.  Before placing on pan, roll in white sugar and place on pan!

Preheat heaven to 350° and bake for about 7 minutes.  Eat and devour!



I feel like I always burn chocolate cookies, but just watch for the tops of the cookies to start cracking and you're good to go!
