S'mores Dessert Mix: A Summertime Favorite

Warning: This dessert mix is HIGHLY addictive. I dare you to only take one handful...

I'm really on a s'mores kick these days. (Did you miss the post earlier this week? Find the S'mores Cupcake recipe here), There is something about the combination of graham crakers, chocolate, and marshamallows that I love. To mix things up from the tradition ooey, gooey, campfire s'more, give this dessert mix a try! It's so quick to throw together, and is a huge hit at parties (my coworkers loved it!).

To me, this dessert is summer's favorite snack mix. The recipe doesn't require any cooking/heating/baking at all, so while the temperature is hot hot hot outside, your kitchen will stay nice and cool when making this treat.

S'mores Dessert Mix
makes 7 cups

7 cups Golden Graham cereal, divided
1 cup semisweet chocolate chips, divided
1/3 cup creamy peanut butter
3/4 cup confectioner's sugar
1/2 cup mallow bits

1. Pour 6 cups of the cereal into a Ziploc bag.
2. In a heatproof bowl, combine 3/4 cup chocolate chips and peanut butter. Microwave until melted - melt for 30 seconds, stir, and continue to melt in 30-second intervals until completely melted. Pour mixture over cereal in the bag. Seal and shake until cereal is evenly coated with the peanut butter/chocolate mixture.
3. Add confectioner's sugar to bag. Seal and shake again until cereal is evenly coated.
4. Pour mixture in a large mixing bowl and add remaining cup cereal, 1/4 cup chocolate chips, and mallow bits. Gently stir and serve.

*TIP: After coating the cereal with the confectioner's sugar (Step #3), I let the cereal completely cool in the Ziploc bag before mixing in the rest of the ingredients (Step #4).
